Tasty Tuesday Lime Dijon Chicken!
I scribbled this recipe down on a note pad I keep in my wallet when I was sitting in a doctor's office flipping through magazines a while back. Just ran across it again when I tore out a bunch of old notes and threw them away. I tried this a few nights ago, and it was pretty darn good. Budley loved it! I served it with brown rice and a salad. Sorry, didn't think to take a picture, but I think you'll enjoy the one I chose anyway.

Lime Dijon Chicken
1 whole chicken, rinsed and patted dry
Sauce
3 tbsp Dijon mustard
1 tbsp mayonnaise
1 clove garlic, minced
3/4 tsp ground black pepper
zest and juice of 1 lime
Directions
Preheat oven to 400 degrees. Salt chicken generously and coat with sauce. Bake uncovered 1 1/2 hours, or until chicken is as tender as you like, basting occasionally as the sauce collects in the bottom of the pan. The sauce is great mixed with the rice, too!
